Can you make a brownie healthy and taste good? You absolutely can with these Peanut Butter and Navy Bean Brownies.
For these brownies the key ingredient is (like the title doesn’t give it away) navy beans. I saw a recipe in a magazine for a type of dessert bar using navy beans and it got me thinking, how about making brownies with navy beans. At first I was not quite sure how they would turn out. I’ve heard the use of black beans in brownies but not navy beans.
To my surprise these brownies are moist and not too sweet just sweet enough to curb your sweet tooth. Sometimes regular brownies can be a little too sweet and make you feel heavy.
Peanut Butter Navy Bean Brownies
Ingredients
- 2 cups navy beans
- 1/3 peanut butter or any nut butter
- 1/3 brown sugar
- 1/3 honey or sugar
- 2 teaspoons vanilla
- 1/2 cup flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1/4 cup coco powder
Directions
Pre heat 375 degrees
- In a bowl mix flour, salt, baking soda, baking powder and coco powder. Set aside.
- In a food processor place navy beans, peanut butter, brown sugar, honey and vanilla.
- Mix until well combine and smooth.
- Pour the mixture into a bowl and slowly mix in the flour mixture.
- Pour into 8 x 8 in baking dish.
- Bake for 20 mins until tooth pick comes out clean.
