Cheesy Mac and Cheese (without cheese) is creamy and flavorful. The kids don’t need to know it doesn’t have real cheese. Pasta is a main staple in this household. I make pasta for dinner up to 3 nights a week.

What is the secret if your asking, how is the sauce made with no cheese? The secret is nutritional yeast. Nutritional yeast has a cheesy and nutty flavor to it. The first time I heard of it I was curious on how it would taste and how it looked like at the store. It usually comes in a form of flakes just like red pepper flakes.

What is Nutritional Yeast?

This yeast is the same type that’s used for bread making and brewing beer. The difference is this type is grown and made to used for food.

What does it taste like?

It has a cheesy and nutty flavor.

How can you use it?

You can use it in sauces, sprinkled on popcorn, sprinkle on roasted veggies and adde to soups.

Cashews, white beans, nutritional yeast, salt and paprika.

I’m always in search for ingredients that are different and healthy. I don’t go too far from the familiar. By incorporating new ingredients I need to add them to already familiar ingredients. For instants, I know they like white beans and cashews are a winner. Nutritional yeast is a new one for them.

Let’s start making Cheesy Mac and Cheese (without cheese).

First you need to soak your cashews over hot water. Let them soak for 10-15 mins.

In a blender place soaked cashews, white beans, nutritional yeast, salt and paprika. Add water or milk to desired consistency. Place in a pot and heat through.

Cook your pasta according to package and pour sauce over your pasta.

This is the best mac and cheese without the cheese. It's creamy and full of flavor.


Ingredients

Units Scale
  • 1 cup cashews
  • 1 can white beans
  • 4 tablespoons nutritional yeast
  • 2 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon paprika
  • 11 1/2 cup milk or water (to desired consistency )
  • 1 lb pasta shells


Instructions

  1. In a bowl place cashews and pour hot water over cashews.
  2. Let soak for 10-15 mins.
  3. In a blender add soaked cashews, white beans, nutritional yeast, garlic powder, salt and paprika.
  4. Add milk or water to blender until it reaches desired consistency.
  5. Place sauce in a pot and heat through.
  6. Cook pasta according to package.
  7. Once pasta is cooked add sauce and enjoy.
