These Applesauce Muffins are moist, fluffy, and not sweet with just that perfect hint of applesauce. It makes an excellent quick breakfast when in a hurry.

Can’t believe it has almost been a full year since the kids have been home and doing distance learning. The kids have been doing good with distance learning, and my middle child is the one that has had the most trouble with school work in general. With the distance learning, his grades have improved; maybe it’s because there are no distractions. But hey, whatever works is all that matters to me.

Ingredients to make Applesauce Muffins

With the kids being home they are able to pick up their breakfast and lunch from school twice a week. It’s is great because I don’t have to think about what to make for breakfast and lunch during half the week. I have noticed we have been getting a lot of apples, I didn’t know what to do with them. I began making applesauce. There was a point that I had a lot of applesauce, and that’s when these muffins came to life.

Let’s start making Applesauce Muffins

Ingredients

  • Flour
  • Baking powder
  • Ground cinnamon
  • Salt
  • Sugar
  • Applesauce
  • Egg
  • Milk
  • Oil

Instructions

  1. Pre-heat oven to 375 degrees, line your muffin tins with paper liners and set aside.
  2. In a medium bowl, add flour, baking powder, cinnamon, salt, and sugar; mix well.
  3. In a medium bowl, add applesauce, egg, milk, and oil; mix well.
  4. Slowly add the flour mixture to the applesauce mixture; mix well
  5. Pour mixture into the pre-paired tins; fill ¾ of the way.
  6. In a small bowl, add sugar, ground cinnamon, and mix well; this is to top the muffins.
  7. Top the muffin batter with ½ teaspoon of the sugar and cinnamon mixture. 
  8. Bake for 20-25 mins; until a toothpick comes out clean.

  • 3 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1 cup sugar
  • 1 cup applesauce (or two 8 oz individual cups)
  • 1 egg
  • 3/4 cup milk
  • 1/2 cup oil

Topping

  • 2 tablespoon sugar
  • 1 teaspoon ground cinnamon
