These are not your ordinary Peanut Butter Oatmeal Cookie Recipe; these are soft, easy, and take no time to make. Oatmeal and peanut butter make a great match.

Cookies are my favorite dessert to make ever since I was in high school. Maybe because it was the easiest to make. I would always follow a recipe that I would get online, that’s when the internet was a just starting to become popular.

Ingredients

  • All-purpose flour
  • Rolling oats
  • Baking powder
  • Baking soda
  • Ground cinnamon
  •  Salt
  • Unsalted butter- I like to use unsalted butter because I can control the salt, but if you want to use salted butter that works, omit the salt in this recipe.
  • Sugar
  • Brown sugar
  • Egg
  • Creamy peanut butter– You use crunchy peanut butter instead of creamy.

Instructions

  1. Pre-heat oven 375 degrees, line cookie sheets with parchment paper, and set aside.
  2. In a medium bowl, place flour, rolling oats, baking powder, baking soda, and ground cinnamon; mix well and set aside.
  3. In another medium bowl, place softened butter, sugar, and brown sugar; mix well. Add egg; mix well, then add peanut butter and mix well.
  4. Slowly add flour mixture to the butter mixture; mix until well combined.
  5. Scoop out cookie dough onto pre-paired cookie sheets with a cookie scoop, or you can use two spoons. Place them about 2 inches apart.
  6. Bake cookies for 10-12 minutes, until golden brown around the edges.

Note

  • Store any leftovers in an airtight container, they stay fresh for up 2-3 days.
